Tender roasted pork - a key ingredient in the Cuban sandwich

1/4 | cup | lemon juice | |

2 | lbs. | boneless center pork loin roast | |

Stir together garlic and salt in medium bowl. Add dried oregano, onion and juices and mix thoroughly. Heat oil in small sauce pan, add garlic mixture and whisk.
Pierce roast pork multiple times with a sharp knife or fork. Pour garlic mixture (save a little for roasting) over pork, cover and let marinate in refrigerator for two to three hours.
Place pork on rack in roasting pan and sprinkle with remaining marinade. Cook uncovered at 325 F. Roast until completely cooked (160 F.), about 40 minutes. Baste occasionally.
Remove pork roast and slice thin. Bring pan juices to a boil and simmer until the juice is reduced by half. Sprinkle juice onto the pork as you prepare the sandwich.
